CAROLINA-STYLE FOR PULLED PORK
Makes 1.5 cups

1 tbs	vegetable oil
1 small	white onion, minced
2	garlic cloves, pressed
1/2 c	apple cider vinegar
1/2 c	worcestershire sauce
1 tbs	yellow mustard
1 tbs	dark brown sugar
1 tbs	paprika (optionally hot paprika)
1 tsp	kosher salt
1 tsp	cayenne pepper (optional)
1 tsp	natural liquid hickory smoke (optional)
1 c	ketchup

Heat oil in a 1qt pan. add onion and garlic and saute until softened,
about 5 min. Add (excluding ketchup) remaining ingredients and bring
to a boil. Reduce heat to low, add ketchup and cook until thickened
and carmelized, stiring often, about 45-60 minutes.


KANSAS CITY STYLE FOR RIBS
Makes 2 cups


1.5 tbs	olive oil
2 oz	red onion
1 oz	green onion
2 oz	roasted red pepper
4	cloves garlic

1.25 oz brown sugar
2 tsp	chili powder
2 tsp	dried oregeno
.5 tsp	ground cloves
1.5 oz	paprika

2 oz	lemon juice
1/2 c	soy sauce
1 c	crushed tomatos
1 c	hunts ketchup
4.5 oz	heinz chili sauce
3 oz	grandma's molasses
1.5 oz	honey
2 tbs	red wine vinegar
2 tbs	dijon mustard

Coarsly chop vegetables and garlic. Sautee in oil for 10 min, then
puree in food processor. Return paste to pot, add dry ingredients
and stir. Add liquids and stir. Simmer uncovered for 1 hour.
Salt to taste.
