SOY/GINGER BOK CHOY
Serves 4 as a side.

1	medium head bok choy, about 1.5-2lbs
2 tbs	soy sauce
1 tsp	sugar
2 tbs	peanut or sesame oil
1 tbs	minced ginger (optional)

Rince bok choy.

Seperate leaves from stems. Slice stems into thin pieces, about
2-3" long. Roughly chop leaves.

Mix sugar and soy sauce.

Heat oil in a large fry pan or wok. Add stems and cook until lighlt
browned, stirring frequently - about 5-6 minutes.

Add ginger and cook, about 30 seconds.

Add leaves and soy mixture and cook, stirring frequently, until
tender - about 1 minute.

Serve immediately.
