CHOCOLATE COOKIES

2 1/2	sticks butter
2 c	sugar
2	eggs
2 tsp	vanilla
2 c	flour
3/4 c	unsweatened cocoa powder (ghirardelli works well)
1 tsp	baking soda
1/4 tsp	salt

Cream butter and sugar, mix in eggs. Add dry ingredients. Roll into
1" balls and place on parchment paper on cookie sheets. Bake at
350F 10 minutes. DO NOT OVERBAKE!  Cool on sheet one minute, then
remove to rack.

NOTE: cookies should be removed when they look like they're just about to crack.

NOTE: first batch may require a few extra minutes if the sheets are not hot.

NOTE: batter is VERY THICK, do not use a hand mixer to mix dry
ingredients in, use a spoon or kitchenaid upright.
