PEANUT SESAME NOODLES
Serves 6 s a side-dish or 4 as a main-course.

1/2 c	crunchy peanut butter, or smooth and 1/4 cup roasted peanuts, crushed.
1/3 c	soy sauce
1/4 c	warm water
2 tbs	chopped peeled fresh ginger
1 	garlic clove, chopped
2 tbs	rice wine
2 tbs	roasted sesame oil
2 tbs	sugar
1 tsp	dried hot red pepper flakes

1 lb	linguine, spaghetti, chinese egg noodles or pad thai noodles
4	scallions, thinly sliced
1	red or yellow bell pepper, cut into 1/8-inch-thick strips
3	carrots, matchsticked
1	block tofu, cut into 1/2" cubes, optionally lightly fried

Puree first ingredients in a food processor until smooth, about 
2 minutes, then transfer to a large bowl.

Cook pasta in salted water until tender. Drain and rinse well under
cold water.

Add pasta, scallions, bell peppers, and tofu to dressing, tossing
to combine, and serve immediately.
