POTATO SALAD
Serves 8 as a side dish.

3 lb	redskin potatos
1/4 c	fresh flat-leafed parsley leaves
3 tsp	fresh thyme leaves
3 tbs	olive oil 
2 tbs	minced shallot

Slice potatos 3/16" thick. Add to pot of cold, salted water. Bring
just to a boil or until potatos are just cooked enough to eat.
Drain, add to large salad bowl.

Chop parsley and thyme, shallot. Add to oil. mix with potatos. Add
oil if needed. Add salt to taste. Serve at room temperature or
chilled.
