WASABI AND PANKO CRUSTED WHITEFISH
Serves 4.

4	6oz aprox skinless whitefish fillets, such as tilepia or halibut
1.5 tsp	wasabi paste
1/2 c	mayonnaise
1.5 c	panko
	salt

Preheat oven to 400 with top rack 6" from broiler.

Stir together wasabi paste and mayonnaise in a small bowl.

Dry fillets, then place in a shallow baking pan or sheet lined with
foil. Season fillets with salt, then spread half of mayo mixture
over the tops. Sprinkle with half of the panko, pressing it lightly
into the mayo mixture. Flip fillets and repeat.

Bake until fish is just cooked, 10-15 minutes. Turn on broiler and
broil until top crumbs are just brown, 1-2 minutes.

Can be doubled, broil fish in two batches on two sheets.
