WILD RICE PILAF
Serves 4 as a side.

1/4 c	wild rice
1 c	long grain rice, or basmati
1 tbs	olive oil
2 c	water
1/2 tsp	salt

In a medium saucepan, bring water to a boil. Add wild rice and
simmer gently, covered, for 30 minutes.

Strain wild rice, reserving cooking liquid. Add water if reserved
liquid is less than 1.5c.

Wipe sauce pan dry and return to high heat. Add olive oil and long
grain rice. Sautee, stirring often, for 5 minutes. Add 1.5c of reserved
cooking liquid and salt and return to a simmer. Cook, covered, for
15 minutes.

When long grain rice is cooked, stir in wild rice and let stand,
covered, for 10-15 minutes.
