SOUTH AFRICAN YELLOW RICE
Serves 8.

2 c	long grain rice, such as jasmine or basmatti
1 c	combination of raisins, golden raisins and/or dried currants
1 lg	onion, dices medium
10	whole cloves
4	1/4" thick slices of fresh ginger, skin on
2 tsp	kosher salt, or 1 tsp table salt
1 tsp	tumeric
5 c	water
4 tbs	butter
3 tbs	olive oil

Heat oil in a heavy pot. Saute onions until just soft, then add
rice and saute until it begins to turn white and smell nutty. Add
the water, raisins, cloves, ginger, tumeric and salt and bring to
a boil. Reduce heat and simmer, covered, until water is absorbed,
about 20 minutes. Add butter and fluff with a fork. Let sit covered
for 10 minutes before serving.
