ZUCCHINI MASH
Serves 4-6 as a side dish.

1	large yellow or orange bell pepper, finely chopped.
2 tbs	olive oil
2 tbs	butter
1	large garlic clove, minced or pressed
6	medium zucchini (1.75-2lb), halved lengthwise and sliced into
	1/5 inch pieces
1/2 tsp	black pepper
1/2 tsp	salt, or to taste
1/3 c	chopped scallions, from 2.

In a 4 qt pot or saucepan, cook the bell pepper in oil adn 1 tbs
butter over medium heat until softened, about 5 minutes. Add the
garlic and cook until fragrent, about 1 minute. Add zucchini, salt
and pepper and a splash of water and bring to a boil over medium
high heat, then simmer, covered, about 6 minutes,. Zucchini will
release more water. Remove lid and simmer until moisture is reduced
and zucchini is soft, about 6 minutes more.

Roughly mach the zucchini with a potato masher. Add scallion and
remaining tbs of butter and stir until butter is incorporated.
