ZUCCHINI AND ONIONS
Serves 4 as a side.

2 lbs	zucchini and/or yellow summer squash
2 	small white onions
2 tbs	olive oil
	salt
	pepper

Cut onions in half and slice thinly.  Cut squash in half lengthwise
then into 1/2 slices, place in collander and salt. Leave in sink
for 1/2 hour.

Heat 1 tbsp oil in large fry pan.

Cook onions until soft, but not brown. Remove onions from pan.

Add remaining tbsp of oil to pan and heat. Add squash and cover.
remove cover every 1-2 minutes and toss squash to ensure even
browning. Continue to satuee/steam until squash is soft. Add onions
to pan with the squash to reheat. Serve immediately.
